Sauerkraut recipe. For every kilogram of cabbage, take 25 grams of salt. The salt should be simple rock salt, coarsely ground.
Never use iodized salt.

Mix the cabbage with the carrots and salt, mix everything carefully, no need to grate, the cabbage will give juice itself.
Put the cabbage in a barrel or ceramic container (you can use a wooden tub if you have one), tamp it with your fist, put oppression on top. Leave it to ferment for 58 days. Watch the condition of the cabbage. The juice should become transparent. Every day, morning and evening, pierce the cabbage with a stick to the very bottom to release gases. As soon as the cabbage is ready, store it in the refrigerator or cold cellar.
