**Roasted Veggie Recipe**
Ingredients:
3 cups Cubbed Butternut Squash: Peeled and cut into ½ inch cubes.
3 cups Small Brussels Sprouts: Trimmed and cut into half from top to bottom. These will be roasted flat side down so they develop a beautiful golden brown colour.
2 tbsp Olive Oil
Salt, Pepper and Garlic powder to taste
2 tbsp Orange Marmalade, warmed
Addons: Dried Cranberries, Pecan Pieces & Crumbled Chevre (Goat Cheese)
Instructions: Toss washed and prepared vegetables in olive oil and seasoning and spread on a parchment paper lined baking sheet.
Roast at 425 degrees for approx 45 minutes.
In a sheet pan, toss the cubed squash with olive oil, salt, and pepper. In another sheet pan, tossed the halved Brussels sprouts also with olive oil, salt, and pepper. Roast at 425 degrees F. The sprouts should take 18 to 20 minutes, and the squash 22 to 25 minutes.
Once veggies are finished roasting, transfer to a large bowl or serving dish and toss with marmalade, pecans and cranberries. Top with a sprinkling of crumbled goat cheese.
