A night of camping and listening to the sounds of the nearby river and evening rain. Shacked up in my cozy truck cap camper with heavy rain starting in the evening and going all night, but waking up to a beautiful clear morning able to see the towering coast mountains covered in some fresh snow.

Location

Meals
Campfire Kebabs with Strawberry/Spinach/Feta Salad
Marinated beef chunks
Red pepper
Purple onion
Mushrooms
Spinach
Crumbled feta
Chopped strawberries
Olive oil
Balsamic vinegar

Marinate beef chunks for a few hours and skewer along with pepper, onion and mushrooms, cook on campfire. Prep salad by mixing spinach and sliced strawberries, and top with feta, olive oil and balsamic.

Air Fryer Brownies
1/3 cup of flour
1/4 cup of cocoa powder
dash o salt
3/8 cups of melted butter
1/2 cup of sugar
1 teaspoon vanilla
1 egg
chocolate chips

Mix flour, cocoa and salt in a bowl. Mix sugar, butter, vanilla in a different bowl, and stir in egg. Add dry mixture to wet and mix up. Stir in a handful of chocolate chips as well. Add to pan and top with more chocolate chips. Air fry for 14 minutes at 340F (or maybe more because mine ended up pretty gooey on the bottom). Serve with jar of milk.
