RECIPE AND INGREDIENTS:
2 eggplants.
1 red onion.
Salt.
Parsley.
2 tomatoes.
Cornstarch.
Olive oil.
Black pepper.
Feta cheese.
Ingredients for the sauce:
3 tablespoons sweet chili sauce.
2 tablespoons teriyaki sauce.
1 tablespoon oyster sauce.
1 tablespoon olive oil.
1. Coarsely chop 2 eggplants and place in a bowl.
2. Cover with water and set aside for 1015 minutes.
3. Cut 1 red onion into half rings and place on a plate.
4. Salt, mix the onion well and set aside.
5. Finely chop the parsley, place in a bowl and set aside.
6. Slice 2 tomatoes, place on a plate and set aside.
Secret sauce recipe:
7. Place 3 tablespoons sweet chili sauce and 2 tablespoons teriyaki sauce in a bowl.
8. Add 1 tablespoon oyster sauce, 1 tablespoon olive oil and mix well.
Let's make eggplant crispy:
9. Pour cornstarch onto a plate and pour olive oil into a saucepan.
10. Lightly squeeze out excess liquid from eggplant and roll in cornstarch.
11. Fry eggplant for 34 minutes and place on a paper towel.
12. Salt and pepper the eggplant and transfer to a salad bowl.
13. Place tomatoes on top of the eggplant and put red onion on top.
14. Pour in 1/2 of the sauce and sprinkle with parsley.
15. Dice feta cheese, place on top of vegetables and pour the remaining sauce over.
