Today I am sharing some healthy from scratch meal ideas. I often get asked how we use many of the ingredients we grow on our small homestead when I share preserving videos, so join me in my kitchen as I share some easy meals.
Rhubarb Muffins:
2 cups oat flour
3/4 cup sugar
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp kosher salt
1 cup Greek yogurt
1/2 cups melted butter
2 eggs
1 tsp vanilla
1 1/2 cups diced rhubarb
2 tbsp sugar
1/2 tsp cinnamon
Mix wet ingredients together, then whisk in dry ingredients. Stir in rhubarb. Bake at 400 for 2022 minutes. Makes 12.
