Chudu is a traditional Azerbaijani pastry that is baked to perfection, featuring a savory filling of minced meat, smoked tail, and a blend of spices wrapped in a rich and tender dough. This dish is a beloved part of Azerbaijani cuisine, often enjoyed during festive occasions and family gatherings.
Ingredients:
For the Filling:
500 grams minced meat
180 grams smoked tail, finely chopped
1 large onion, finely chopped
2 tablespoons barberry (20 g)
1 teaspoon salt
0.5 teaspoon black pepper
0.5 teaspoon red pepper
0.5 teaspoon turmeric
For the Dough:
1 kg flour
1 teaspoon salt
1 tablespoon sugar
3 egg yolks
3 tablespoons sour cream
70 ml melted butter
200 ml milk
Enough water to make the dough pliable
Instructions:
1. Prepare the Filling:
In a mixing bowl, combine the minced meat, chopped smoked tail, and chopped onion.
Add the barberry, salt, black pepper, red pepper, and turmeric.
Mix thoroughly until all ingredients are well incorporated. Set aside.
2. Prepare the Dough:
In a large mixing bowl, sift the flour and add the salt and sugar.
Make a well in the center and add the egg yolks, sour cream, melted butter, and milk.
Gradually add enough water while mixing to form a smooth and pliable dough.
Knead the dough on a floured surface for about 10 minutes until it becomes elastic and smooth.
Cover the dough with a damp cloth and let it rest for at least 30 minutes.
3. Assemble the Chudu:
Preheat your oven to 180°C (350°F).
Divide the dough into equal portions and roll each portion into a ball.
On a floured surface, roll out each ball into a thin circle.
Place a generous amount of the meat filling in the center of each circle.
Fold the edges of the dough over the filling, pinching to seal and form a neat packet.
Place the chudu on a baking sheet lined with parchment paper.
4. Bake the Chudu:
Brush the tops of the chudu with a little melted butter or egg wash for a golden finish.
Bake in the preheated oven for 2530 minutes or until the pastry is golden brown and cooked through.
Remove from the oven and let cool slightly before serving.
