Greek Spanakopita Recipe:
2 packs frozen phillo sheets
2 pounds raw spinach (chopped)
1 bunch dill (finely chopped)
2 bunches green onion (chopped)
1 Lg. carton Lg. curd cottage cheese (rinsed & drained)
1 pound feta cheese
4 eggs
Salt & Pepper
Saute spinach w/ olive oil S&P until tender (leave in strainer to drain)
Mix green onion, dill, S&P, crumbled feta, cottage cheese & cooled drained spinach to large bowl.
Mix w/ 4 beaten eggs to complete filling.
Melt 2 sticks of salted butter & lay thawed fillo sheets flat with damp dish towel over the top.
Butter each sheet & proceed to flag fold each one (demo in video) butter top & either freeze or bake w/in 24 hrs at 350 F until golden brown.
