Pizza
160 g lukewarm water
Pinch of sugar
0.5 tbsp active dry yeast
10ml olive oil
228g bread flour
Semolina
0.5 tsp salt
Sauce
118g tomato puree
¼ tsp oregano
¼ tsp chili flakes
¼ tsp sugar
¼ tsp salt
½ tbsp olive oil
In large bowl add water, sugar, sprinkle yeast on top, let sit for 10 minutes, then stir to combine.
Add olive oil, flour and salt, mix until the dough starts to come together. On a semolina’d surface remove dough from bowl and knead for 10 minutes.
Place in a lightly oiled bowl, cover bowl with plastic wrap, leave until doubled in size (2 hours).
Preheat fan oven to 220 celsius. Punch dough down and let rest for 20 minutes whilst you make the sauce. To make sauce, combine all ingredients listed above under ‘sauce’.
Place dough on semolina’d baking tray and stretch/shape dough.
Top with sauce, bake for 15 minutes (until crust is golden) then remove from oven and cover with mozzarella/toppings and bake for 3 minutes until cheese is bubbling.

Limmy’s Loaf
500g strong bread flour
10g Salt
7g Yeast
350g lukewarm water
5ml Olive Oil (I used 10ml and it was too much)
Put flour in a bowl with yeast on one side of the bowl and salt on the other side of the bowl.
Mix the yeast on its side, mix the salt on its side, pour in the water and mix it all up.
Tip it out onto the worktop and then leave it whilst you wash the bowl (this allows the water to reach any dry bits of the flour… according to Limmy).
Knead for 10 minutes.
Cover bowl in oil, roll dough around a little bit so that its covered. Cover bowl with cling and leave for two hours.
Knock the dough back and prepare a baking tray with greaseproof paper.
Grab the diagonal corners, fold them in on each other, then roll it so that the ‘seam’ is underneath. Tuck it under itself so it’s tight and put it on a baking paper tray and cover with clingfilm/towel. Put a wee bit of flour on the top so that it doesn’t stick to the towel. Rise until doubled again (two hours).
Preheat (fan) oven to 180 celsius. Slash five times Put a tray of boiling water below for steam, bake for 30 minutes.
