Ingredients:
2 1/2 cups Flour (we used all purpose flour unbleached)
1 Tbsp Baking Powder
1 Tsp Baking Soda
5 Egg Whites
1/3rd Cup of coconut cooking oil
1 Cup of buttermilk
2/3rd cup Plain Greek Yogurt
Frosting:
Whipped Cream Cheese
Preheat your oven to 325F
In a bowl, mix together all of your dry ingredients. In another bowl, mix together your wet ingredients. Slowly incorporate all ingredients together. You want a cake batter consistency. If it's too dry, add a bit of water, if it's too wet, add more flour. Now get 6 bowls (you can do 5 if you like to work with the cake pan set, but we did 6). And divide your ingredients equally. I used a kitchen scale for this. We got just over 5 ounces of batter in each bowl, but you might end up with more, as long as it's all even, we should be good! Once divided, add 1 2 drops of food coloring to each bowl and mix. Pour your batter into your pans. If you do 6 layers, we baked 3 at a time. Bake the cakes for 10 14 minutes. As soon as your toothpick comes out clean, they are done! Let your cakes cook completely before frosting. I used whipped cream cheese for frosting, but you can use any dog safe frosting that you like. Frost in between each layer, and carefully stack your cake. Frost the outside and top if you like as well. I added some sprinkles to the top. That's it!
And for those of you wondering if people can eat this, YES, you can. It tastes like buttermilk pancakes, but less sweet since there is no sugar in this recipe. If you want to make a version of this for yourself, add 1 cup of sugar to the recipe, and 1/2 tablespoon of vanilla.
