Recipe (can be easily doubled)
1.5# boneless/skinless chicken thighs cut in bite size chunks
1/2 Onion
1 and 1/2 t minced garlic
23T Achiote Paste
1/41/2 C warm water to rehydrate paste
1 small bay leaf
1./2 can diced tomatoes
1/8t cinnamon
1/8t nutmeg
1/2t dried oregano
1/4t ground cumin
1/2T apple cider vinegar
salt and pepper to taste
Serve over rice or mashed potatoes
